So yes, I am a little crazed with recipes since the pot party. We have owned our Instant Pot for years before it became popular but I just let Bernie cook beans and some of his own recipe concoctions in it. I never felt the love until we planned the pot party and I almost burned the house down.
Yes, me the famous cook that I am LOL, not really. We invited some friends over to learn about the Instant Pot and demonstrated two recipes so that we could inspire others to eat more plants . All was going well until I needed more taco shells for the
I wanted to warm the shells quickly so I put them in the oven under broil. Well imagine 5 mins. later the cookie sheet of taco shells on fire. Lots of excitement that will probably be more of a lesson for all since our fire extinguisher was on empty. My husband was glad it was or the kitchen would have been a mess. Luckily my friend Alex stepped in and took the burning shells outside.
Although we will probably remember the fire more than the recipes, I decided to experiment with a chili the next day. It came out delicious! Even Janelle said all by herself “This is good mom.”
Ground Beef (I used Gardein vegan beef)
1 chopped pepper
1 chopped onion
2 cloves of chopped garlic
1 ½ cups of shredded carrots
1 Tbsp of worcheshire sauce
4 Tbsp of chili powder
1 tsp of garlic powder
1 Tbsp of chopped fresh parsley (I used some parsley I had dried)
1 tsp of sea salt
½ tsp of pepper
1 26 oz can of chopped tomatoes (I used fire roasted)
1 large can of red chili beans
1 small can of white chili beans
1 cup of water
Set Instant Pot to Saute’ and sauté in a little oil or water beef, peppers, onions, carrots, garlic for 3-5 mins. until veggies are soft.
Add the rest of the ingredients and stir. Cover and set to manual time of 30 mins. Let naturally release.
